    Tea-by-Tea Brewing Guides

Three teas we sell most often, each with the method that suits it. Every guide covers leaf amount, water temperature, and the step that actually changes the cup.

BiLuoChun green tea - top-drop (上投)

Cha Wu BiLuoChun top-drop brewing guide: 3 g curly downy leaf, 80-85 C water in a glass, tea dropped on top, steep about 1 minute

3 g of curled, downy leaf, 80-85°C / 176-185°F water, in a glass. Fill the glass first, then drop the tea on top: the curls sink slowly and open evenly. A faint white haze in the first cup is tea down, not cloudiness from the water.

LongJing green tea - mid-fill (中投)

Cha Wu LongJing mid-fill brewing guide: 3 g flat leaf in 300 ml of 80-85 C water, water poured first, leaf added, topped up along the glass wall, steeped uncovered

3 g / 300 ml of flat leaf at 80-85°C / 176-185°F. Pour about a third of the water first, add the leaf, then top up along the inner wall of the glass rather than straight onto the leaves. Steep uncovered - no lid - and it is ready when the leaves sink tip-down.

    TieGuanYin oolong - gaiwan gongfu

Cha Wu TieGuanYin gaiwan brewing guide: 8-10 g rolled leaf, 100-120 ml gaiwan, 100 C boiling water, short steeps after a quick rinse

8-10 g of rolled leaf in a 100-120 ml gaiwan with 100°C / 212°F boiling water. Give the leaf a quick rinse to open the tight rolls, then steep briefly - about 5-8 seconds - and lengthen the later rounds as the leaf unfolds.
